Damn. It’s this wine again. Since 2018, this cuvee has been a blend of red and white wines in basically equal proportions. An experiment. Play time. A desperate measure to make something I wasn’t happy with turn into something tasty, lifegiving, and inspiring. In 2020, I started paying a lot of attention to press cuts and fractions as a means to control and mitigate smoke taint in the wines, but I also noticed the changes in the wines through the press cycles as pressure increased. pH/acid shifts. The way the tannin and solid extraction increased. Color and oxidation intensities at different points. I had been thinking that great wines could be made or broken at the press for years but the smoke finally made me really start honing in at this point. For the 2021 vintage which was smoke free(thank you to whoever is in charge of that) I continued this exploration. Often separating free run and press wines for fermentation, and completely separating the harder/late pressings of wines. These hard press cuts were all assembled into two barrels. One for the reds and one for the whites. They aged in those barrels
without topping for a year. Just to see what would happen. Things were reduced. And sometimes they were oxidized. And at the end they both tasted good but I didn’t want to bottle things separately but I did want to make a Birthdays. Roughly representative of our tonnage that year: there is a lot of Pinot and Sav Banc in the mix, but bits and pieces of all of the other varieties too(including syrah which def made it darker than you’d think a wine made of 50% white would be).
Playful and unpretentious party juice. Crunchy and bubbling with life. Chilled red. Coferment. Whatever. Sometimes it tasted like Pinot and sometimes it tastes like Sav Blanc but never both.
