2020 Sapphire, Samphire, And Saturn Returns
Sav Blanc from Hopland planted in the 70s. Dry farmed, organic, no tilling. The vineyard is dying from phyloxera and a few other pressures, but produces an incredibly distinctive fruit because of this. Tiny concentrated clusters with intense phenolic and aromatic content.
Destemmed and macerated for a week. Fermented in stainless and aged in neutral oak for a year.
Closer in profile to the 2018 rather than the 2019. This wine is all about delicacy and grace. Drinking it now, the wine feels somewhere between Ploussard and Nebbiolo but made with white grapes. Ethereal but with a lot of tension and promise. The wine is only just starting to unfurl now, and like every vintage of Sapphires, will continue to improve for months/years as it comes into its own.
